Because dermatologists know what they’re doing. When you do it yourself, 9 times out of 10, you’re doing something wrong.
They use clean, gloved hands. Clean the surface properly. Use sterile instruments to cut (not pop) the acne, and not the skin beneath, drain the gunk, and afterwards they clean it again to make sure they got everything.
People on their own though? They go rough, using their bare grubby little fingies. And after they’re done popping, they just leave it alone with whatever gunk they popped out. No cleaning. No patch. Might even be bleeding a little bit, which is just an avenue for infection.
Tldr: It’s that people don’t do it properly. They adhoc fix it in a way that’s not really optimal.
