Why does milk pair so well with cake, cookies, etc?

Drinking milk after eating some cookies or a piece of cake really hits the spot. Why is that?

Milk pairs well with cake, cookies, and other sweets because it has the sixth basic taste called “oleogustus” or fat taste. This property changes the overall flavor profile of sweets and helps ease the sweetness by coating our tongues and acting as a palate cleanser.

Balances out the sweetness

There’s a saying in Asian countries, “that goes good with rice”. A lot of dishes are “strong” and the rice helps spread the flavor out in your mouth

In addition to the taste changes that have been mentioned by other answers, milk also has an interesting property of binding to other fats that are left on your tongue and then washing those fats down as explained in this previous ELI5

Fats and sugars combined is very exciting for the human brain. Nowhere in nature do you get refined sugar and fat together. That’s why it’s so addictive. Part of the explanation anyway.
