Why does milk pair so well with cake, cookies, etc?

Drinking milk after eating some cookies or a piece of cake really hits the spot. Why is that?

In addition to the taste changes that have been mentioned by other answers, milk also has an interesting property of binding to other fats that are left on your tongue and then washing those fats down as explained in this previous ELI5
