Like when you take a spoonful of salt (not saying this is a normal thing, but this is what I did to spark the question), why does your mouth produce so much more saliva than normal?
Osmosis. Water the main ingredient in saliva flows from areas of low concentrations of salts to areas of high content till the areas balance out in their salinity.

Wherever there is sodium, water will flow. Your saliva is 98% water and is being attracted out of the glands. You also have a natural salivary response to the sensation of taste.
