Title. Whenever I eat Kraft Mac and Cheese shapes, it tastes far superior to regular Kraft Mac and cheese despite seeming like they should be identical minus the shape of the noodles

The noodle to cheese ratio changes. Since the shape macaroni has a different surface area, a different amount of the cheese can adhere to it per unit weight. Thus changing the flavor profile in each bite.
