CPU-s of olde didn’t do that, deprived of cooling they just kept going until the smoke came out and they broke for good.

That’s an expensive sort of performance improvement, so modern CPU-s don’t do that anymore, if the temp goes up they automatically reduce the clock speeds as to not generate as much heat anymore and remain in safe temperature ranges. If that doesn’t help and temp keeps rising they eventually try to shut down entirely, they try to do that before the smoke is expected to escape.
