I’ve read about these concepts and constantly hear them but I still don’t understand how money/assets fluctuations happen

It’s all Supply & Demand. But more specifically, it’s thousands of “Bid and Asks” little offers going on every second. If theres more people bidding than people selling (or “asking), the price of the stock will move up a little so it becomes even.
