Water molecules are very small. They’re three atoms-two hydrogen and an oxygen. That makes them a lot lighter than most molecules.

Fat molecules are significantly heavier and larger. That makes them significantly harder to evaporate.

Fat does evaporate, but its molecules are big and heavy and take a lot of energy to get into the air, and when they get there they don’t stick around for very long (clean your stove hood if you don’t believe me). Additionally, you can’t simply add more heat because eventually the fat actually starts to burn instead of evaporating.
