Because evaporating water is very energy intensive.

Water molecules are polar, which means that they have a slight positive charge on one side and a slight negative charge on the other. This makes them cling together like magnets. To make water evaporate, you need to break these bonds, which requires a lot of energy.

Sweating also works by the same principle.
