The voice changes when you’re sick because of the inflammation in your throat. When you’re sick, your body produces mucus to help fight the infection. The mucus can thicken and block your airway, making it difficult to breathe. This can cause your vocal cords to close up, which makes your voice sound high-pitched. The mucus can also cause swelling and irritation in your throat, which makes your voice sound deep.

Anything that alters the air flow in your throat or nose can alter the sound of your voice, any swelling or mucus in there will do that.
