Why doesn’t milk curdle in black coffee?

It’s not acidic enough. Milk needs about a pH of 4 to curdle whereas most black coffee is only about a pH of 5.

Milk gets more acidic over time as the lactic acid builds up so that’s why spoilt milk will curdle in coffee.
