Why hot drinks taste different when in different material containers

In the mornings I’ll make the same cup of tea twice. Same 3 sugars same amount of milk same amount of water same teabagthe only difference being that one is made into a ceramic mug and the other being a stainless steel thermal that I take to work. When I drink the thermas at work it has a significantly different taste. What is it like this

does the thermos mug have a lid? hot liquids evaporate, thus affecting the concentration of the liquid left behind. A lid will condense the steam and not allow it to move out, so the concentration will stay the same. however, the thermos will also keep it hotter for longer. something like coffee is made by passing hot water through the beans to heat them and extract oils and flavour compounds. in a coffee place, an espresso runs hot water through the beans for like 25-30 seconds. heating the beans to high or too long can scorch them, and lead to off flavours. your thermos keeps the oils and flavour compounds at a high temp for longer, so the they can kinda degrade.

in the same way as microwaving popcorn for 2 minutes makes it pop and taste good, but microwaving it for two minutes, and then microwaving it for a further 5 minutes at a lower power will ruin it
