why is “can not” spelt like both “cannot” and “can’t”?

“Can’t” is the contracted form of cannot. Same as “would’ve” is the contracted form of “would have”. Contractions aren’t (are not) really different spellings like “color” and “colour” as much as they are different forms of the same word.
