In nature, warm water often means stagnant water where bacteria could be growing, while cold water usually comes from underground aquifers or melting snow/ice, which is usually pure and safe to drink.

Over time we became preferential in seeking out sources of cold water, and presumably those early humans who did died of waterborne disease less frequently than those who drank from warm, stagnant water sources.
