salt is something that almost everybody uses, and in similar amounts.

with other foods, you have people who do not eat them, so they get no iodine. Or they eat a particular food a lot, leading to overdose.

In addition to the usage comments Sodium Iodide is incredibly similar in taste and cooking effect to sodium chloride, so in most uses the difference goes completely unnoticed.
