I never quite understood why it is so much easier to keep a bike balanced while riding at a certain speed, compared to riding it really slow, or while standing…

It’s due to rotational inertia. Take a single bicycle wheel and rotate it around. You can move it freely. Now spin the wheel fast and try and change its direction: much more difficult! You can read more about this here: https://en.wikipedia.org/wiki/Moment_of_inertia
