When my brother was a freshman and sophomore in high school (c. 2005-2007), he had a nighttime job washing dishes at this fancy Italian restaurant in our old neighborhood where our mom was a waitress.
They used to pay him $1 for every dinner plate he washed, and he used to make about $100-$150 a night, at a part time job.
Why is it so impossible to find a job like that these days? I’ve been out of high school for 8 months now and finding a job that pays that well is like finding a piece of hay in a needle stack.

There are a lot of factors involved. Minimum wage have not increased. Companies have been working very hard to keep wages secret giving them a huge advantage when negotiating pay. Part of this is very active union busting. It is also much easier to get loans then it used to so it is possible to survive on lower wages for some time until you drown in debt. On the other hand this means that people do not have the funds to spend time finding better paying work as they need money to pay the mortgage.
