Why is it that swamps are not completely covered in mold.

Insects love to eat mold, some even farm mold for food. The plants make the food, the fungus eats the dead plants and animals, insects eat the fungus and plants, animals eat the insects and plants, fish eat the plants and insects. All that stuff eating is what keeps the whole system in balance, and if there’s an imbalance a nomadic pioneer comes from a nearby ecosystem to start to rectify it, they would see it as a land of opportunity and food.
