If you apply a cold compress you’re told to put a barrier between the “cold” and your skin to prevent burns. How come organs placed directly on ice for transplanting don’t get burnt?

Because they’re not placed directly on ice. Great care is taken not to damage them and they’re usually wrapped in some form of protective film
