Why is saturated fat so dangerous compared to unsaturated fats?

Fats are all hydrocarbons. they are chains of carbon and hydrogen and some other atoms.

Saturated fats are saturated meaning they have all the hydrogen atoms in them as much as they can have. So reactions are hard and they stay in your body. Especially dangerous if they stay in blood vessels.

Unsaturated fats have at least one carbon-carbon double bond and hence don’t have all the hydrogen atoms that they can afford to have. So they are easier to break down.

Both fats are still bad if you eat lots of it above the recommended levels.

The short answer is that they are pretty solid and difficult to break down in the blood stream. This leads to them accumulating in the blood vessels potentially leading to clogging which can result in a heart attack or stroke.
