Why is string cheese stringy and how does it stay intact?

Its called biaxial orientation. The cheese is a biopolymer which are long long chains of molecules like a string. If you pull them in one direction the polymer strings align with each other. Trying to cut across the bundle would mean breaking the bonds (hard) but pulling strings apart is easy.
