Why is the polarity of water so important for life?

I’ve often heard people say “the polarity of H2O is the very essence of life itself”, things like that. While I understand why water is polar, why is it so important in life? Doesn’t it just create hydrogen bonds with other molecules and react with them?

For substances to dissolve in others it needs to interact with each other. If water was not polar things like sodium, potassium and other essential things for your life would not be soluble in water and wouldn’t be able to reach the parts of your body that need them
