why is there a minimum weight requirement in Formula 1? Wouldn’t teams be incentivized to lessen the weight of their cars for faster speeds?

Because back in the day car manufacturers used to “lighten” their car by essentially dipping their metal frame in acid.
This…. obviously… significantly weakened the car and made it very bad in a crash.
They wanted to avoid that. So the minimum weight is basically enough to make the cars safe.
