I believe one of the biggest reasons is that you breathe through your nose. Each breath you inhale through your nose sucks in newer colder air into it, and with the skin on your nose being rather thin with fewer blood vessels it is quickest to get cold. It will still get cold when you breathe through your mouth only, but I think now as fast.
