In short, knitting is simpler: lift loops, thread yarn one direction or another, continue. Crochet involves a lot of knots, which is a very dexterous motion.

One could invent a crochet machine – we have human hand robots – but it is economically unfeasible. You’d be doing it for the novelty, not the financial payout.
