why small electronic components are not burned while soldering at such a high temperature?

Soldering is usually done very quickly, not long enough to burn the component. If you hold a soldering iron to it long enough it WILL burn the component out. If you do it quickly enough it won’t have time to burn. Machines do this in milliseconds.
