Eli5: why same material with smooth surface will be more easily scratch compared to less smooth like glossy vs matte photo?

They aren’t. A smooth surface of a diamond will be equally as hard to scratch as a rough one. Material hardness does not depend on the surface smoothness, it’s determined by its molecular structure.
Smooth surfaces are not more prone to scratching then rough surfaces but it is much harder to spot a shallow scratch in a rough surface. You may think of a rough surface as something that have already been scratched as much as possible. Adding another scatch will usually not change the texture by much.
