Why some laptop/PC got BSOD or sudden quit whenever playing old game (such as Stronghold HD or Simcity 4 both of them release in early 2000)?

Older operating systems, (Windows 2000/XP) are like the vertical plugs found in Northern America, and newer operating systems (8.1, 10) are the 2 round prongs found in Europe. The game is trying to “plug into” the operating system, and the operating system is no longer set up for that plug.
Its probably due to memory management and security.
Newer OS comes with more strict memory mapping and protection. Once a program tries to read/write a memory location in a way that worked for older OS, it causes a crash.
