Why strange matter is contagious ?

What I believe I know is that inside the core of neutron stars some quark decays through the weak force into a strange quark due to great pressures but I don’t know why this would be contagious or why it would only be stable in large quantities.

If a state of matter is more stable than it’s surroundings, it releases a lot of energy. That energy can cause matter around it to also collapse to that state. Strange matter is more stable than most matter, but it takes a lot of energy, like that at the core of neutron stars, to cause the initial strangelet to form.
