ANSWER: It’s the most efficient shape for liquid to go down the drain and naturally it moves into the shape of least resistance, the most optimum way to flow in this situation is a whirlpool shape.

Conservation of angular momentum. If there’s any rotation in the water at all (which there almost certainly will be, unless you’ve left it to stand for hours) then that rotation will concentrate and get faster as the water shrinks toward the plughole, causing the whirlpool effect.

Interesting fact: The direction that it rotates depends on what hemisphere you are in. In the Northern Hemisphere it rotates clockwise and in the southern hemisphere it rotates Counterclockwise due to the rotation of the Earth.
