A lot of internal processes either slow down or shut down during sleep. Your brain effective paralyses you to keep you from sleepwalking (or at least it should). Heart rate slows. Breathing slows. Bunch of other things as well. Those things need a little time to start up again.

There’s also the matter of waking from deep sleep Vs light sleep. Alarms waking you when you’re in a deep sleep can be upsetting to the processes that do specifically take place when sleeping.
