why when someone opens the sink when I’m showering with hot water all of the sudden the water turns cold?

Because your house only has a single supply of hot water. So if someone opens a tap for hot water, part of the hot water that was directed to your shower goes to that sink and it’ll take some time for it to heat back up (assuming you have a system that can keep up with the pressure).
