why when we work out we need to breathe out from our mouth when normally we do it from our nose?

Activating our muscles burns oxygen and creates carbon dioxide. The more vigorously we exercise, the more oxygen we burn and the more carbon dioxide we produce.

Eventually our need to get more oxygen in and to get excess carbon dioxide out becomes so great that we have to breathe faster and harder to maintain a high level of physical activity.

Because the mouth is a much larger aperture than the nostrils, we can get a lot more fresh air in and a lot more used air out with each breath by panting through our mouths then by breathing through our noses.

But mouth-breathing comes at a cost. When we breathe though our mouths, the air that comes in is less filtered and conditioned as it might be if we breathed slowly through our noses, because our noses and sinuses have structures in them that filter and condition the air, which are bypassed when we breathe through our mouths.
