If wisdom teeth used to be for meat and other hard food why do they come out so late at 17-25 years of age, wouldn’t it make more sense for them to come in earlier since our ancestors still needed to eat those hard foods during their adolescence

Skull/ jaw isn’t big or developed enough to come any earlier. As it is, they don’t properly fit for many people.
If you didn’t know how to brush your teeth, then your teeth might be in bad shape by 18… but hey, you get brand new teeth!
