Would a plant gain and lose mass in a sealed environment

If I sealed a plant in a glass ball with soil and nutrients would the plant gain and lose mass while it grows. The only external element would be the sun.

No, in a closed system like a terrarium it wouldn’t gain or lose any appreciable mass. That’s assuming it truly was sealed and didn’t leak. Photosynthesis doesn’t change mass because of the law of conservation of chemical reactions.
