As someone who doesn’t know about this: too high, you’re walking on literal arches. Your foot is arched too much, not enough contact with the ground to rest your foot, so it’ll always hurt since your weight is trying to push on it to the right position. As for too low, it will rest too much with the ground, won’t provide any extra sitting to your step, so you’ll always have your entire weight on your foot, rather than slowly sinking into it and then slightly springing up to the next foot. So your foot will also always hurt for another reason.
