As water evaporates it turns from liquid to gas. That process requires energy In the form of calories which are supplied by the body. Calories is a measurement of another property called heat. Think of it this way. In order for water to evaporate, it needs to get heat from somewhere. It gets it from the body. This makes us feel cooler.
