Why when you press cube on the ice machine does that trapezoid like shape come out and not a cube?

In:

Water expands when it freezes.

If the water was frozen inside a container that had straight sides like a cube it would be trapped by the expansion like a cork in the neck of a bottle.

If it’s frozen inside a container with sloped sides the expansion actually helps to push the ice out of the mold into the storage bin on the ice machine

The trapezoid shape is to help with removal from the ice cube mold. In the molding industry it’s known as a draft angle, and can range from half a degree to a few degrees. Parallel sides would cause sticking as soon as the cube got slightly out of alignment.
