having to manually count carbs and control my sugars is more than enough on my wellbeing. having to eat each component of my meal separately? just sounds depressing.

Things like fiber can slow down digestion. So it would be better to drink juice or soda after some fiber, in theory.

Also, certain foods like blueberries can mediate blood sugar levels.

Components of food have to be digested and pass the gut barrier, to affect blood sugar levels.

If food gets all mixed up in the stomach, how does it matter what order I eat it in?
