So I recently saw a Sandhill Crane eating a mouse which sent me down a rabbit hole about Sandhills cranes. One website is quotes saying “The sandhill crane is a prehistoric species” and it got me thinking. What animals are not prehistoric? Is there a different definition aside from before recorded history? Even domesticated animals were found in the Fertile Crescent. Is it just a buzzword to make the animal seem cooler? I just don’t understand. If written history began around 3500 BCE wouldn’t every animal that existed prior to that be considered a prehistoric animal?

Yes…it’s a buzz word. By any theory accepted by science or religion, all species are prehistoric.
What they mean when they say this is that (they believe) the species has changed minimally since its ancestors in prehistoric times. In reality, they re implying that the species has changed little over a much greater time period, since prehistoric times really are not that far back.
