can someone explain how cinematographers are able to remove any behind the scene stuff when dealing with filming characters looking at mirrors?

The Mirrors are typically slightly angled.

You could always do two different camera shot straight on and edit them using masking in adobe after effects or any other video editing software.

But the majority of the time if you look, the mirror is ever so slightly angled.
