“the establishment” in the case of the USA is the general tenure of politicians and political ideology that seek to maintain the status quo for (generally speaking) wealthy elites.

Prime example is look at the Democrats with “moderates” vs “socialists”. The moderates represent the “establishment” because they are less likely to pass laws that shake things up for the wealthy elites (e.g. wealth/income taxes used to fund social programs to benefit the people).

“anti-establishment” is an ideology that generally speaking seeks to disrupt this tendency of government to favour the rich.
