How do those itsy bitsy containers of half and half stay fresh for who knows how long, Unrefrigerated, but If I leave a container from the fridge on the counter for just a couple hours it starts to turn.

It takes bacteria to sour cream. And the little creamers are sealed and pasteurized so there’s not enough bacteria present to multiply up in a few hours or a day or so. That said, I have opened sour creamers. So now I check before putting it in my coffee.
