BBQ sauce, ketchup, mustard, mayo, etc. are all bought non refrigerated, so why do they need to be refrigerated after they are opened?

I always refrigerate bc that’s what the package says to do but restaurants don’t do it. The ketchup and whatnot are always on the table.
