BBQ sauce, ketchup, mustard, mayo, etc. are all bought non refrigerated, so why do they need to be refrigerated after they are opened?

None of the condiments ls you listed need to be refrigerated. Yes, even the mayonnaise. If it says refrigerate after opening on the package, it’s probably just the company being extra cautious.
