The majority of products especially in a supermarket won’t contain a security tag.

Security tags are either hard like the sort used on clothes, normally pin tags, or expensive boxed items like a spider tag where wires go from a base unit around all four sides and tighten. You also get soft tags which are small square and flexible which can be sewn into care labels, inside packaging etc.

All tags should trigger security gates but they don’t always because it’s an imperfect world. You also get instances of electrical interference that falsely trigger gates i.e. Some items that contain a lot of cable that’s tightly wrapped.
