Eli5: As children how do we learn to not wet the bed, and why is this not something we are born with?

No human is born with the ability to walk or crawl (or even turn over) – so that makes it kind of difficult not to wet the bed or poop the diaper. Maybe it is because we are born with so much potential to learn that we are not pre-programmed with as many basic instincts as other animals.
