Eli5: As children how do we learn to not wet the bed, and why is this not something we are born with?

Because humans evolved larger brains, and therefore larger heads, it became unfeasible for them to be born fully developed, because the size of the head would be unmanageable in the birth canal. That is why humans are born relatively helpless compared to other mammals, and why things like sphincter control are not fully developed at birth.
