Of course, but many will denature before they vaporize. Long chains of carbon easily combine with oxygen in the air and will “burn” (even if no flame is produced). Also the fats and oils are usually a specific configuration of the carbon-carbon bond angles and adding all the energy it takes to make the gaseou can let it rearrange, so that it is no longer the same molecule.
