Touchscreen technology relies on the proximity and pressure of your finger. The screen protector is thin and flexible enough that it doesn’t really change how the screen underneath detects the presence or pressure of your finger.

The “feel” part is purely based on what material the screen protector is made from. Many screen protectors are the same, or very similar, glass to the screen itself so they feel basically the same. There are some adhesive plastic screen protectors that intentionally change the feel to be more like paper.
